Easter 'Holistay'

This Easter, we're making the most of time spent indoors by coming up with new ways to connect with loved ones. While it may not be a traditional Easter, the Fleur girls have been keeping busy at home baking Easter treats and connecting with friends and family over video chat to share a cup of tea and a sweet treat together. Here are a few of our favourite recipes to hopefully inspire you to make this weekend the perfect 'holistay' and connect with your loved ones over a shared sweet treat and a phone call. 

Easter Afternoon Tea Scones

Scone Recipe:

Ingredients

- 40g spreadable butter

- 225g self-tasing flour

- 1 1/2 level tablespoons golden caster sugar

- Pinch of salt

- 110ml milk

- A little extra flour

Method

1. Pre-heat the oven to 220°C, gas mark 7. Begin by rubbing the butter into the sieved flour quickly, using your fingertips, then stir in the sugar followed by a pinch of salt.

2. Using a knife, mix in the milk little by little, and when it’s all in, flour your hands and knead the mixture to a soft dough.

3. Place the dough on a floured pastry board and with a rolling pin (also floured) lightly roll it out to a thickness of about 3cm.

4. Then take the pastry cutter and tap it sharply so that it goes straight through the dough.

5. When you have cut as many as you can, knead the remaining dough together again and repeat.

6. Then place the scones on the baking sheet, dust each one with flour and bake near the top of the oven for 12–15 minutes.

7. When they’re done they will have risen and turned a golden brown. Then transfer them to a wire rack and eat as soon as they are cool enough, spread with butter, jam and clotted cream.

 

Iced Coffee & Banana Bread

Iced coffee Recipe:

Ingredients

- 2 table spoons of instant coffee

- 2 table spoons of sugar

- 2 table spoons boiling water

- Milk

- Ice

Method

 1. In a bowl mix whisk together the coffee, sugar and water for 3-5 minuets until light brown colour and thick

2. In a glass add 3/4 milk with ice cubes 

3. Add coffee mixture on top

4. mix together and enjoy!

 Banana Bread recipe:

Ingredients

- 2 medium bananas 

- 200g caster sugar

-110g plain flour

- 2 tsp baking powder

- 1 tsp cinnamon

- 75ml milk

- 40ml sunflower oil

- 2 eggs

- 1/2 tsp salt

Method

1. Pre heat oven to 160c and lightly oil a medium sized loaf tin

2. In a small bowl mash the bananas and sugar together with a fork

3. Whisk in the egg, milk and oil

4. In a separate bowl, stir together the plain flour, baking powder, salt and cinnamon.

5. Add the wet mix to the dry mix and  mix together until you have a smooth consistency.

6. Bake at 160c for 55 mins or until a toothpick comes out clean

7. Let cool for 10 mins before slicing, enjoy!

Brunch Pancakes

Pancake Recipe:

Ingredients

- 135g plain flour

- 1 tsp baking powder

- 1/2 tsp salt

- 2 tbsp caster sugar

- 130ml milk

- 1 large egg

- 2 tbsp melted butter (allow to cool slightly)

Method

1. Sift the flour, baking powder, salt and caster sugar into a large bowl. In a separate bowl whisk together the milk, egg and melted butter.

2. Pour the milk mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Let stand for a few minutes.

3. Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted , add a ladle of batter. Wait until the top of the pancake starts to bubble, then flip and cook until both sides are golden brown.

4. Repeat until all the batter is used up. Add you favourite topping and enjoy!
